In French, girolle refers to both a type of mushroom and a type of cheese grater. In fact, the way the girolle (grater) peels the cheese into curly shapes, makes the cheese look like the curly underside of the mushroom called girolle (pictured left). Hence both instrument and mushroom share the same name. Girolles are used to create curly cheese rosettes from Tête de moine cheese, in particular, though similar cheeses may also be cut and presented in this way, such as the Frère Chasseur cheese, from Quebec. Prior to the invention of the girolle, a knife was used to scrape the top of the cheese in a circular motion of the cylinder to make rosettes look just like the mushroom called girolle. It was a challenge to make these rosettes as regular as possible. In the 1980s, a Jurassian, Nicolas Crevoisier, frustrated from scraping the cheese with a knife, to make evenly sized rosettes, had the good idea to invent the Girolle. Traditionally, it was the chore of the father of the family to scrape the cheese into rosette shapes, however, since the invention of the Girolle, it is the children of the family, who are able to participate in the cheese plate decoration, using the girolle.
